Organic sourdough breads are best when made from live flour, freshly ground on stone, containing all of the elements of the grain. The advantages they then offer compared to commercial products are considerable.

  • The endosperm is made up of carbohydrates, incomplete proteins, and a very small amount of vitamins and minerals.
  • Bran provides fiber, which aids digestion, as well as vitamins, proteins, and minerals, including iron.
  • The germ is rich in vitamins D and E, high quality proteins, unsaturated fats, minerals and carbohydrates.


Most of our customers who are slightly gluten intolerant can eat sourdough bread because the natural leavening process predigests gluten. For those who are more intolerant, we have also developed a gluten-free sourdough, millet and buckwheat bread, which is extremely popular! The recipe has been perfected throughout the winter to make it more fluffy and airy than most commercial gluten-free breads. Our customers buy several to slice and freeze them, so they always have them at home. Our gluten-free bread makes a great little gift for your intolerant family member or friend.
